Cod omelette with green sauce

Put the cod desalting , pass first under the running water , then place in a bowl with water for 24 hours . Change water twice.


Chop 4 cloves of garlic and put them to fry in a pan with a little oil . When it starts to brown add the onion , chopped pepper and a pinch of salt. Let it cook all over medium heat until browned vegetables. Add the cod dry and chopped , cook for a few minutes and remove to a colander to drain well and remove excess fat and liquid.


Beat the eggs and add the vegetables and cod fry . Mix well and make individual tortillas in a pan with a little oil . Prepare the four tortillas, not very curds .


Chop two cloves of garlic finely and brown in a pan wide with a little oil . When they start to brown add a little flour and fry well . It also adds a touch of chilli , sliced ​​and pours wine and broth. Finish by adding a handful of chopped parsley, add salt to taste and cook briefly . Incorporates the tortillas to the pan and let it cook over low heat for 2-3 minutes.


Serve accompanied with tortillas and green sauce . Decorate the plate with a sprig of parsley and a slice of chilli.
